Wild Garlic Kraut

Fermentation is a great way to preserve and extend the season of foods. Lacto-Fermentation is the ancient technique of fermentation used to make sauerkraut and is known to enhance nutrients like vitamin C as well as making many of the nutrients more bio-available, meaning they are easier to digest and absorb into the body. This is because the vegetables have been "pre-digested" by healthy gut bacteria known as lactobacilli, which give it the slightly acidic taste.
Wild Garlic Kraut is amazing as a condiment, ingredient for sauces and soups, sandwiches, sushi, burgers, hot dogs, pasta and to accompany cheese. It goes well with vegetables, fish and meat.
Wild Garlic Brine
This divine liquid is extracted from Wild Garlic using sea salt and naturally fermented with bacteria beneficial to the gut.
